■ Dish Story
The crispy iron ladle snack is a traditional delicary from Luogang and Luofu areas in the Shangshan
region of Xingning. It is especially popular and essential snack during the Lunar New Year celebra-
tions. Being located at the source of the Dongjiang River, the region’s culinary customs is influenced
by the flavours of the Dongjiang River basin and Jiangxi cuisine.
