➢ The purpose of cleaning and sanitizing
surfaces that come into contact with food
is to eliminate any food residue that can
serve as a nutrient for bacteria to grow. It
is also important to kill any bacteria and
viruses that may already be present on
the surfaces.
➢ After cleaning and sanitizing, it is crucial
to ensure that all equipment and surfaces
are fully dry before storing them to
prevent bacterial growth.
