Biofilms
➢ Biofilms are complex communities of various
microorganisms that work together.
➢ Bacteria present in the biofilm come together
and create a protective slime or matrix
around themselves.
➢ These biofilms can contain and safeguard
harmful pathogens such as Salmonella spp.,
Staphylococcus aureus, Escherichia coli, and
Listeria monocytogenes.
➢ For the growth of biofilms, microbes,
moisture, food, and surfaces are essential,
and all these conditions are generally present
in most food service and preparation areas.
