Optimum Water temperature
Ensuring that you use the right temperature and quality of
water for your tea ensure you install a commercial boiler which
offers different temperature control and flexibility.
Pogson of Northern Tea Merchants recommends, “That it is
important to learn that leaf teas need to be treated with care
and of course water temperature is important. Large leaf black
tea can tolerate water just under 100 degrees centigrade,
however water used for fine leaf black tea should never exceed
90 degrees centigrade”.
As well, do make sure that you fit a professional water filter to
your commercial water boiler which will further guarantee that

contact with your leaf tea supplier. Consider the following teas for
your menu.
1. Breakfast tea
2. Earl Grey
3. Green tea
4. Gunpowder tea
5. Chinese tea
6. Assam and
7. Darjeeling.
