These healthy lunches are
perfect whether you are working
at home or in the office!
Baked Spinach and Mushroom
Quesadillas
Spinach is rich in iron, supports cardiovascular health, and is high in fiber.
Mushrooms reduce inflammation, boosts the immune system, and supports skin
and nail health. These quesadillas are also baked, reducing the amount of grease and
creating a more flavorful meal!
Ingredients: Place the mushrooms, spinach, mozzarella, and
cheddar evenly over half of each of the tortillas,
4 tortillas and fold the other half over top.
Olive oil
8 ounces sliced mushroom Bake the tortilla for about 6 minutes, then flip each
1 cup shredded mozzarella over and bake for another 6-7 minutes, until the
1 cup shredded cheddar cheese is melted and the outside of the tortillas is
3 cups fresh, chopped spinach lightly browned.
Preheat the oven to 400 degrees F. Serve with a side salad or grilled veggies!
