Cooking for Healing
Bright Spring
Salad
As spring opens her sunny eyes after the cold winter, it is time to introduce lighter
foods into our diets as they come into the season. This salad is packed with fresh
crunchy vegetables and employs a powerhouse of vitamins, nutrients, and flavor!
Ingredients 3-4 oz feta cheese
1 -2 tbs minced red onion
1 1/2 cup cherry tomatoes 2 tbs olive oil
1 diced cucumber 1 tbs red wine vinegar
1 cubed avocado black pepper to taste
Instructions
Wellness Retreats Halve the cherry tomatoes. Dice the cucumber,
cube the avocado, and add all three to a bowl.

Mix together the olive oil, vinegar, and black
pepper. Add the pepper slowly to taste.
Add the olive oil dressing and very gently toss
to ensure the avocado and feta stays together.
Serve immediately. Enjoy!
Notes:
Give Me Details If making this salad in advance, leave out
the avocado and add the avocado right
before serving.
