Bacon, Ham & Triple Cheese Loaf
4 ½ c bread flour
3 ½ c all purpose flour
5 c ham, chopped
3 c bacon, chopped
½ c red and bell pepper, chopped
1 ¼ tbsp yeast
1 tbsp baking powder
½ tbsp bread improver
2 ½ c butter
1 ½ cheese cheddar, cubed
1 ½ c mozzarella cheese, grated
1 c quezo de bola, cubed
1 ⅓ c full cream milk powder
1 ¼ c evaporated milk
¼ c warm milk
1 c white sugar
8 eggs
1 tbsp vanilla
flour for dusting
For the egg white mixture:
3 egg whites
¼ c evaporated milk
Dissolve yeast in 1 ¼ tbsp sugar and ¼ cup warm milk. Set aside for 10
minutes. Mix all the dry ingredients and add milk, yeast mixture,
vanilla, eggs and butter. Blend well add chopped ham, bacon, bell
pepper, cheddar cheese, quezo de bola and mozzarella cheese. Put in
greased loaf pans. Let rise till double for 30 -45 minutes. Brush with
egg whites and evaporated milk mixture. Bake in a preheated oven at
350°F for 30- 35 minutes. 48
