Choco Cashew Cinnamon Pudding


            9 c day old bread

            4 ½ c evaporated milk
            2 ½ c all purpose cream

            3 c chocolate chips
            2 c baked cashew nuts chopped
            1 tsp baking soda

            2 tsp baking powder
            1 ½ c bread crumbs

            2 ½ c cocoa powder
            12 XL eggs
            2 c dark brown sugar

            2 tsp cinnamon
            5 tbsp vanilla

            2 ½ c butter


            In a bowl, soak for 2 hours day old bread, all purpose cream and

            evaporated milk.

            Preheat the oven to 350F. In another bowl, sift the dry ingredients,
            cinnamon powder, baking powder, cocoa powder, baking soda and

            bread crumbs.

            In a separate bowl, cream butter, eggs and sugar. Gradually add flour
            mixture in butter mixture until well blended.


            Stir in vanilla, add the soak bread mixture in flour-butter mixture.

            Add chocolate chips and cashew nuts.

            Line baking pans with greased paper. Put batter mixture and let it rest
            for 30 minutes. Bake in the oven for 25-30 minutes.
