Special Pan de Piña
For the dough: *For the streusel topping:
4 c all purpose flour 6 c bread flour Yield: 36 pcs
4 c bread flour 4 ½ c milk powder
2 tbsp yeast 4 ½ c butter
1 tbsp bread improver 7 c sugar
1 tbsp baking powder *Combine sugar, butter, milk powder
1 cup sugar and bread flour. Mix well till crumbly.
¾ tbsp salt For the egg white mixture:
¼ c warm pineapple 6 XL egg whites
1 cups pineapple juice ½ c evaporated milk
8 XL eggs yolks For the filling:
1/ tbsp vanilla 4 c butter
1 ½ c butter 1 cup condensed milk
yellow food color 1 cup pineapple juice
flour for dusting 5 c crushed pineapple
2 tsp vanilla essence 1 ¾ c sugar
In a nonstick pan cook pineapple, butter, condensed milk and sugar.
Stir in vanilla, cornstarch mixture, blend well and let it cool.
In a bowl, dissolve 1 ½ tbsp of sugar and yeast in warm pineapple
juice. Let it stand until foamy, about 10 minutes. In another bowl, sift
together all the dry ingredients and set aside.
Prepare a bigger bowl, combine yeast mixture in flour mixture, egg
yolks, butter and liquid ingredients.
