Carrot Loaf with Walnuts





             2 c all purpose flour

             2 c cake flour
             3 tbsp baking powder

             ½ tbsp baking soda
             4 c grated carrots
             3 c walnuts chopped

             2 c pineapple tidbits well drained
             10 eggs

             ½ tbsp cinnamon powder
             ¼ tsp nutmeg
             ¼ tsp all spice

             ¼ tsp ground cloves
             ¼ tsp ground mace

             2 ¾ c all purpose cream chilled
             1 ½ bars cream cheese chilled
             1 ½ bars butter chilled

             ¾ cup butter
             ¾ cup evaporated milk

             ¾ cup condensed milk
             1 ¼ c brown sugar



             Pre heat oven in 350°F. In a stand mixer or hand mixer, cream butter,
             all purpose cream, eggs and cream cheese till double in size. Sift flour,

             baking powder and baking soda. Add all the dry ingredients Add
             condensed milk, evaporated milk and butter. Fold 3 cups walnuts in
             the mixture. Put mixture into the loaf pan, up to ¾ full and top with

             walnuts. Bake for 30 minutes.
