2 c cake flour           Special Choco German Bread
             2 c bread flour

             4 c all purpose flour              *For the filling:                 Yield: 32 pcs
             ¾ tbsp salt                        2 c bread flour

             2 tbsp active yeast                2 tsp chocolate flavor           For the topping:
             1 ¼ c sugar                        3 c butter melted                5 ½ cup bread flour
             ¼ cup warm water                   1 can condensed milk             3 ¼ sugar

             1 cup milk                         1 ½ cup bread crumbs             ¾ c milk powder
             8 eggs yolks                       ¾ cup cocoa powder               2 ¾ c butter

             1 ¼ c butter melted                 ¼ cup vanilla sugar
             2 tsp vanilla extract              1 cup sugar
                                                2 tsp vanilla extract
                                                *Combine all the ingredients.

                                                For the egg wash:
                                                4 egg yolks

                                                4 tbsp milk

             In a bowl, dissolve 1 ½ tbsp of sugar and yeast in warm liquid. Let it
             stand until foamy, about 10 minutes. In another bowl, sift together all

             the dry ingredients and set aside.

             Prepare a bigger bowl, combine the yeast mixture and the flour
             mixture, egg yolks, butter and liquid ingredients.

             Knead the dough on a floured surface. Spread the dough and use your

             wrist to form a round ball. Repeat the procedure of kneading till
             dough is elastic and smooth. Put the dough ball in a greased bowl

             covered with a damp cloth and let it rise for 1 ½ -2 hours.

             Punch the dough to let out the bubbles and roll on a floured surface.

             Make 60 g balls. Roll dough to form an oblong. Put the filling and seal.
             Make three slits on top. Brush with egg wash and roll in toppings.

             Allow to rise for 30 min. Bake in the oven at 350°F for 20-25 minutes. 62
