Special Leche Flan





              36 egg yolks                                                   Yield: 12-15 llaneras

              6 cans condensed milk (Alaska)
              3 cans evaporated milk (Alaska)
              1 c all purpose cream

              1 tsp orange or lemon extract
              1 tbsp vanilla

              sugar













              Mix all the ingredients together and blend well. Set Aside.

              Put 1 tbsp sugar in a llanera and slowly melt on slow fire till amber in
              color. Do not put water.

              Fill half of the steamer with water. Bring to a boil.


              Carefully scoop mixture in a llanera with caramelized sugar already
              hardened and cover with aluminum foil. Secure with a rubber band.

              Steam for 30 minutes. The water must be constantly boiling throughout
              the steaming process.


              *Put a cheesecloth on top of the steamer while steaming to avoid water
              drippings and moist.*

              After 30 minutes of steaming, remove llaneras from the steamer and

              allow to cool for 15 minutes before inverting into containers. Best
              served when chilled.
