Ube Macapuno Cupcakes
3 c all purpose flour 1 tsp ube flavoring Yield: 32-36 pcs
5 c cake flour 1 ¼ c macapuno preserve
¾ tbsp salt 8 XL egg yolks
1 ½ c evaporated milk 8 XL egg whites
1 c condensed milk 2 tbsp baking powder
1 tsp cream of tartar
1 c all purpose cream
¾ c sugar for egg whites
1 ½ c butter
1 c sugar
¾ oz cream cheese
1 tbsp vanilla
¾ c halayang ube
grated cheese
⅛ c ube powder
In a bowl, sift and mix all the dry ingredients.
Add condensed milk, evaporated milk, all purpose cream and vanilla. Set
aside.
In another bowl, cream butter and egg yolks. Add cream cheese till well-
blended. Set aside.
In a separate bowl, beat the egg whites, sugar and cream of tartar. Beat
till stiff but not dry.
Mix the flour mixture, butter and egg white mixtures. Add halayang ube
and macapunppreserve. Blend well.
Scoop mixture and put in greased pan until ¾ full. Rest the mixture for
30 minutes.
Preheat the oven. Bake at 350°F for 20-25 minutes. Top with grated
cheese.
