Basic Dough Recipe





            1000 g or 8 c bread flour

            200 g or 1 c sugar
            10 g or 1 ¼ tbsp yeast
            10 g or 1 ½ tbsp salt

            120 g or ½ c milk powder
            500 g or 1 ¾ c water

            50 g or ½ c butter
            5 g 1 tbsp bread improver (optional)



            In a bowl, dissolve 1 ¼ tbsp sugar and yeast in warm milk. Let it stand
            until foamy, about 10 minutes. In another bowl, sift together all the dry

            ingredients and set aside.

            Prepare a bigger bowl. Combine the yeast mixture and the flour
            mixture, butter and water.

            If kneading by hand, knead the dough on a floured surface. Spread the

            dough and use your wrist to knead. Fold the dough as you knead and
            form a round ball. Keep on kneading until the dough becomes elastic
            and smooth to touch.


            If using a machine, put all the ingredients and knead till the dough is
            elastic and smooth.

            Place the dough in a greased bowl covered with a damp cloth. Let it rise

            for 1 ½ up to 2 hours.

            Punch the dough to let out the air bubbles. Knead on a floured surface
            and form into desired shapes.

            Allow to rise for 30-45 minutes. Bake at 350°F for 20-25 minutes.
