Orange blossom marshmallows

Makes 20-24 marshmallow squares | Preparation time: 15-20 minutes | Cooking time:

What you’ll need:

Ingredients

For the marshmallows

9 sheets gelatine (about 17g)
300g caster sugar
2 Tbsp (30ml) liquid glucose

1/4 cup (60ml) water
2 large egg whites, room temperature
Pinch of salt or cream of tartar
1/2 tsp (2.5ml) orange essence (or flavouring of your choice)

For the dusting

1/2 cup (125ml) icing sugar
1/2 cup (125ml) cornflour
