KNO W YOUR MENU
One of the keys to great service is simply knowing your menu. A solid knowl-
edge of your menu will help to make your job easier.
Make it your mission to ensure you are familiar with every dish, every cocktail
and every wine on your list.
Here are just some of the benefi ts of knowing your menu:
It saves you time
You’ll be able to answer guests queries on the spot instead of having to check
with the kitchen, the bar or a manager. You’ll also know the right follow up
questions to ask the guest. For example: large or small? With ice or straight up?
Lemon or lime? Time is often wasted when we take the order and then realise
that we will have to fi nd the guest to clarify. Or worse still, we hazard a ‘guess’
as to what the guest wanted and then have to remake the item because we
guessed wrong!
It allows you to give great recommendations
Knowing your menu ensures you are able to accurately recommend food and
drinks that your guests will LOVE, making you their favourite person ever.
It helps you to up-sell appropriately
As part of the Marchetti team you are integral to the success and profi tability of
the venue. Knowing your menu allows you to up-sell appropriately, suggesting
two Salumi Plates to share between six people instead of just one. Or ensuring
the porcini and truffl e arancini contain enough pieces for everyone at the table to
enjoy.
It will minimise guest complaints
If you know your menu, you can help the guests make the right choices which
will avoid guest complaints and in turn, save you time.
You will appear super competent and professional
The more competent you are, the more the guest will relax. A relaxed guest is a
happy guest. A happy guest is a joy to serve.
The only person who can learn your menu for you... is you!
