Creamy Truffle Polenta


















































        Ingredients                                             Instructions



        2 Tablespoons - Butter Unsalted                         In a 6-quart saucepot heat the butter over medium heat. Add the
        ¼ Cup - Yellow Onion Small Dice                         onions and sauté until soft, about 6-8 minutes.
        ½ Cup - Porcini Mushrooms Rehydrated and Chopped        Add the mushrooms and thyme and cook 1-2 minutes.
        1 Tablespoon - Thyme Leaves Fresh Chopped               Add garlic and cook 30 seconds.
        1 Teaspoon - Garlic Minced                              Add polenta and mix to coat with fat and vegetables. Toast for
        1 Cup - Ambrosia® Medium Grain Polenta                  about 60 seconds.
        3 Cups - Chicken Stock Hot                              Add the hot chicken stock and bring to simmer, stirring
                                                                continuously. Cook until tender, about 20 minutes. Mixture will be
        ½ Cup - Parmesan Cheese Grated                          very thick.
        1 Teaspoon - Ambrosia® Truffle Oil                      Remove polenta from heat when finished & add the Parmesan,
        1 Teaspoon - Smoked Salt                                truffle oil, smoked salt, & lemon juice.
        ½ Teaspoon - Ambrosia® Lemon Juice                      Serve garnished with thinly sliced black truffle.
        ½ Ounce - Black Truffle Shaved Thin
