Almond, Cherry, and Vanilla

             Cherries are a good source of dietary fiber and you get an extra
             boost from flaxseed. This recipe uses unsweetened almond milk, a
             perfect choice for those sensitive to dairy. If you prefer, you can use
             regular cow’s milk in place of the almond milk.
             Time-Saving Tip: A cherry pitter makes easy work of removing
             the pits from the cherries in the recipe. If you don’t have a cherry
             pitter or don’t want to make the investment, a pastry tip or chop-
             stick works well, too.
             1½ cups unsweetened           ¹⁄8 teaspoon almond extract
                 almond milk               1½ teaspoons flaxseed
             2 cups pitted cherries        ½ cup ice
             ¼ teaspoon pure vanilla
                 extract
             Combine the almond milk, cherries, vanilla, almond extract,
             flaxseed, and ice in a blender. Cover and blend to the desired
             smoothness. Serve immediately.

             Serves 2. Prep time: 10 minutes.
