  Immediately ensure all stations (including bar and bus) have heavy-duty gloves, hand sanitizer and
               equipment sanitizer.

              Set up a 3-compartment sink for dishes using bottled water (or boiled if your Health Department has
               provided permission to use this method.

              Prepare to bring in additional help, if necessary.


            REOPENING AFTER BOIL WATER ALERT
            Your ROD/ROM will walk you through the appropriate steps that may include the following:

                      You will be advised by your local Health Department when the boil order has been lifted.
                      After the boil order is cleared, all water and soda lines must be flushed for at least 5 minutes and
                       then change the filters.

                      Contact Ecolab to replace all water filters; e.g., ice machines.
              All ice must be discarded, one new set of ice dropped and discarded, ice machine sanitized and then a new
               batch of ice made. This includes ice machines, ice bins and ice buckets. Keep in mind that water lines must
               be flushed first for at least 15 minutes or until water is clear. Contact your local ice machine service agent
               for assistance. DO NOT SKIP THIS STEP.

              Contact the fountain beverage equipment provider and have them verify that the check valves of all drink
               dispensers are working properly.

              Clean and sanitize all equipment and sinks with fresh water after order is lifted.
              Verify that all equipment reaches and maintains appropriate operating temperatures for at least 1 hour
               before using for food preparation.
              Run dishwashers through three complete cycles to assure it is cleansed.




                    SEWAGE BACKUP

            If the backup is in the kitchen or near any food or beverage prep areas, the store must stop serving food until
            the situation is rectified. If the backup is in the FOH, the area around the problem should be roped off. The
            Midway may remain open.
              Contact the Health Department to inform them of the situation. You will also need to tell them your plan to
               correct the problem, your reopening plan and timing for all actions.

              Contract with an outside cleaning service to properly clean the store.
