IN ADDITION TO THE ABOVE STEPS, YOU MUST ALSO FOLLOW THE STEPS LISTED BELOW FOR SPECIFIC WATER
EMERGENCIES:
NO WATER
Turn off water that feeds to equipment; e.g., ice machines, coffee machines, soda towers, etc.
Contact your local water company to determine estimated length of outage.
Once water is restored, allow ice machines to run for one complete cycle. Discard the ice and clean and
sanitize the ice machine.
If loss of water is due to damaged water lines, the water should run for at least 15 minutes or until it is
clear.
Turn on water lines to all equipment.
No water/no hot water for more than 4 hours – the Crisis Leader will provide an update to the Crisis
Team as the situation may garner media coverage.
LOSS OF HOT WATER
Immediately ensure all stations, including bar and bus, have heavy-duty gloves, hand sanitizer and
equipment sanitizer.
Determine reason for outage. Check the pilot light on the heater. If it’s out and you are unable to get it relit,
contact your local plumber for assistance. Request immediate assistance.
Call your dishwasher service vendor to come out and help adjust your dish machine, if necessary. Check
your dish machine and booster heater temps, and calibrate all sanitizer dispensers, including bar. Each
store is equipped with a low temp sanitizer, which will provide sanitation in cold water. Note that this
machine will automatically use considerably more detergent with cold water.
If the water heater must be repaired or replaced, allow the water to run for at least 15 minutes or until it is
clear before using.

BOIL WATER ALERT
Call your Health Inspector and your water company for information on the problem, and to see if your store
is directly affected. Do not assume the information you hear in the media is accurate.
Immediately discontinue serving tap water, fountain beverages, and ice from ice machines.
All ice must be “burned.” Locate a source of ice that is unaffected by the emergency.
Serve bottled water and other bottled/canned beverages to remaining Guests. Potable water must be used
for all water usage. Potable water is water that is safe for human consumption.
Discard any ingredients inadvertently made with tap water during the Boil Water Alert.
