Food, Health and Safety

Biological tampering is the deliberate use of a biological agent to spread disease-producing microorganisms
or toxins in food, water or the atmosphere. These agents can be powders, liquids or other forms and seldom
cause immediate symptoms because they need to grow in order to cause toxic effects. Examples include
anthrax, cholera, plague, smallpox and ricin.

            PREVENTION
 Purchase food and beverages only from approved sources.

 Do not allow unauthorized access to food.
                Inspect incoming shipments carefully.

                Keep accurate inventory records.
 Report unusual activity to authorities, such as unauthorized person(s) acting suspiciously in food prep
                   areas.
 Assign specific Team Members to monitor public access to open food areas as directed by the BOH
