Serving Ideas : Serve with Spanish rice and refried beans

               NOTES : Made this on 8/15/02.  You might think that the spinach
                       would be over powering, but not!  I would make it the day
                       before, put some sauce on the bottem, then layer tortillas
                       1/3 of the cheese and more sauce, and tortillas, 1/3
                       cheese & beef and the rest of the sauce.  Put in the
                       refrigerator over night.  Cook for 45 minutes, then put
                       the remaining 1/3 cheese on top and cook for 15 minutes
                       more.

                       However, it was good!  A real keeper!
