Shrimp and Zucchini

                 1         tablespoon  olive oil
                 1              large  onion -- sliced thin
                 4             cloves  garlic -- minced
                    1/2      teaspoon  crushed red pepper
                 2                     zucchini -- sliced thin
                    1/4      teaspoon  salt -- optional
                 1              pound  large shrimp -- peeled and deveined
                 1           teaspoon  dried thyme

               Heat the oil in a large non-stick skillet over medium-high heat.  Add the
               onion, garlic and crushed red pepper.  Saute until onion is limp.  Add
               zucchini and salt.  Saute until zucchini is half done.  Add shrimp and
               thyme and continue to saute until the shrimp are opaque.  Serve
               immediately.
