NOTES : Clam juice can be quite salty. If you prefer to control
the saltiness of the soup, use fish broth or part broth,
part clam juice.
At Trader Vic's the cream is drizzled over the top of each
serving of soup and the surface quickly glazed under a
very hot broiler just before serving. It is hard to
re-create this in a home oven.
