Karaya gum (Indian Tragacanth, E416)
It is the dried gummy exudates from the tree Sterculia urens family sterculiaceae.
Origin: India, Pakistan
Shape: fine powder or granules.
Odor: acetic acid odor.
Solubility: the least soluble gum in water but swells rapidly, unlike other gums it
swells in 60 % alcohol.
Constituents:
A branched partially acetylated polysaccharide, on hydrolysis yields galacturonic
acid, glucuronic acid, galactose, rhamnose and acetic acid.
Uses:
As a batch for salicylic acid patches for warts.
For denture fixatives.
Locust bean gum (Carob gum, E410)
Endosperm separated from seeds of Ceratonia siliqua Linn family fabaceae
(Leguminosae).
Solubility:
Insoluble in alcohol but swells with water to form a viscous mass.
Constituents:
Galactomannan, 1,4-linked β-D-mannopyranose backbone with branch point from
their 6 position linked to galactose.
