Hydrolysis of Sinigrin gives allylisothiocyanate (volatile oil of mustard),
glucose, as well as potassium acid sulphate,
Uses : sinigrin have revealed anti-cancer, antibacterial, antifungal,
antioxidant, anti-inflammatory, wound healing properties
Also used as Rubefacient and Counter irritant.

 2- Sinalbin

Source: White mustard seed

 HO CH2 S – C6H11O5

  CH3O C
HO N – OSO3 - Sinapine+

  CH3O Complex organic cation CH3
        Sinapine + (Quaternary alkaloid)
                                                    CH3
                         CH=CH-COO-CH2-CH2+N   CH3

                          Sinapine

Hydrolysis of the glycoside sinalbin on the other hand gives:
Acrinylisothiocyanate (phenolic isothiocyanate,pungent tast),
glucose and the acid sulphate of a quaternary alkaloid, named Sinapine

Cation.
Uses : Rubefacient and Counter irritant due to their contents of
thioglycosides.
