Abstract:
Prediabetes is a reversible medical condition that can develop into type 2
diabetes mellitus if not treated early. Diet and lifestyle play an important role
in influencing this condition. This study aims to examine the effect of
consumption of "Gincave" cookies made from ginger, stevia, and cassava
flour on reducing blood glucose levels in people with prediabetes. "Gincave"
cookies were developed as a healthy snack containing the active
compounds gingerol and shogaol from ginger, as well as the natural
sweetener stevia that contains no calories and is safe for people with
prediabetes. The study was conducted experimentally on 30 prediabetes
respondents at the Batu Ampar Health Center, East Jakarta, during May-
July 2025. The sample was purposively selected with specific inclusion
criteria. Respondents consumed "Gincave" cookies regularly for two weeks.
The results showed a decrease in the average blood glucose level in women
from 116 mg/dL to 112 mg/dL, and in men from 110 mg/dL to 102 mg/dL.
These findings suggest that "Gincave" cookies may be a functional snack
alternative that supports the natural management of blood glucose levels.
This study recommends the development of functional foods based on
natural ingredients as an effective and easily applied prediabetes prevention
strategy in daily life.
