Roasted Rainbow
Vegetables
Ingredients
Broccoli Purple cabbage
Zucchini Olive oil
Carrots 4 garlic cloves
Capsicum Rosemary
Pumpkin Oregano
Method
Cut up all the vegetables and assemble in rows, drizzle Olive
oil and add Garlic and herbs over the top.
Cook in the oven on 250 Degrees for 40 minutes, mix and toss,
then back into the oven for an additional 10 minutes & voila!
