Vegetable Risoni Soup





                 Ingredients





                     2 large onions finely chopped    1 litre of water 
                     3 garlic cloves crushed          1.5 veggie cubes 

                     2 carrots roughly chopped        Olive oil 
                     1 zucchini roughly chopped       Optional is celery and

                     1 cup risoni                     silverbeet


                 Method



                    Fry off onion, garlic and carrots in oil until carrots have

                    softened.
                    Add stock/water (pre mix veggie cubes in water or use
                    stock).

                    Bring to the boil and then let simmer for 10 mins.
                    Add zucchini and pasta. Season and let simmer until pasta is

                    soft.
