Easy Green Beans

Ingredients:
2 cans green beans, drained and rinsed
5-6 slices bacon, fried crisp and crumbled
1 onion chopped or cut into thin strips
¼ cup chopped roasted red peppers
½ tsp chopped garlic or garlic powder to taste
Black pepper and salt to taste
Fry bacon crisp, drain, crumble - set aside. Sauté
onion and garlic in 2-3 Tbsp bacon grease until
tender. Add red peppers. Cook 1-2 minutes more.
Add green beans. Cook 1-2 minutes. Add crumbled
bacon when ready to serve. Can add sliced
mushrooms. Pimento instead of red peppers.

Easy Taco Skillet Casserole

Ingredients:
1 lb ground meat (beef or turkey)
1 cup mild salsa
1 can tomato soup
6 corn tortillas cut into 1" strips
1½ cups shredded cheese
¼ cup sour cream
Brown meat and drain. Add 1 can tomato soup and 1
can water, salsa and tortillas. Bring to a boil.
Reduce heat and simmer on low for 15 minutes.
Garnish with cheese and sour cream.
