Fried Cabbage
Submitted By Paula Aldridge Maness
Ingredients:
Pick yourself out a big ole head of fresh cabbage.
Be certain that it is solid and doesn't have worm
holes in it. Fry up some bacon in a big pan, saving
the grease. Cut your cabbage into 1" chunks or
however big you like it. Put a couple Tbsp of your
bacon grease into an iron skillet or heavy bottom
pan. When the grease is hot, start adding the
cabbage and stir to keep it from burning. You'll
start out with a lot of cabbage, but it will cook
down. Cook until the cabbage is tender and most of
the water has evaporated. Add salt and pepper the
way you like it and a little sugar if you want a sweet
touch. You can add a little cayenne for extra zip.
Crumble the bacon on top and serve it up. If you
don't know what you been missing.
