Eggplant Casserole #1

Ingredients:
2 cups cooked eggplant
½ cup chopped onion
2 Tbsp light margarine
½ tsp salt black pepper to taste
1 tsp poultry seasoning
1 cup cracker crumbs
1 cup cubed cheese
1 cup 1% or skim milk
2 eggs beaten or ½ cup egg substitute
Add margarine to hot eggplant first. Then add
remaining ingredients. Put in greased casserole
(can use cooking spray). Bake at 325°F until center
rises and/or top browns. This will take 45 minutes -1
hour.
Optional - add 1 lb ground turkey or very lean
ground beef that has been browned.

French-Fried Eggplant

Ingredients:
Eggplant, peeled and sliced in 1½" sticks
Soak in cold water and salt for one hour or
overnight in the refrigerator
Drain off water and towel dry.
Dip in batter and fry until brown.
Batter:
Beat 2 eggs and add 1 cup sweet milk.
Add 1 cup flour or meal, 1 tsp baking powder, 1 tsp
salt and 1 tsp cooking oil to the milk mixture.
