Egg Muffins

Ingredients:
12 eggs
⅓ onion and bell pepper
small can of mushrooms
⅓ cup cheese
½ lb sausage (already browned)
Preparation:
Mix all ingredients together. Preheat oven to 350°F.
Spray muffin tin with olive oil spray and put 2-4
leaves of spinach in each. Spoon mixture on top of
spinach. Cooked until middle is set. Cook about 40
minutes. This makes 12 omelet muffins. Once they
cool, put 2 omelet muffins in a freezer bag and
freeze them. Then microwave uncovered the next
morning.

Low-Carb Easy Oven Pancakes

Ingredients:
2 oz cream cheese, softened
3 eggs
2 tsp granular Splenda or equivalent liquid Splenda
Cooking spray
Muffin top pan*
In a small mixing bowl, beat the cream cheese with
an electric mixer until creamy. Add the eggs and
Splenda; beat until there are no bits of white cream
cheese left. Spray the muffin top pan well with
cooking spray. Divide the batter between the 6
muffin cups. Bake at 300°F for 20 minutes. Flip them
over and bake another 2-5 minutes to brown the
tops. Makes 6 pancakes. Can be frozen with wax paper
placed between each pancake.
