Quick	Tomato	Zucchini	Chicken	(GF)

	

Ingredients	and	Prep:
1/4	tablespoon	of	pepper	(optional).
1/2	tablespoon	of	salt	(optional).
1	tablespoon	of	dried	basil.
1	tablespoon	of	dried	oregano.
1/2	pound	of	fresh	sliced	mushrooms.
1	medium	sliced	onion.
2	cans	of	chopped	tomatoes.
2	medium	sliced	zucchini.
3	minced	garlic	cloves.
4	4-ounce	boneless	and	skinless	chicken	breast	halves.
	

	

Cooking	Directions:
Grease	a	13-by-9	inch	baking	dish.
Sliced	each	piece	of	chicken	in	half	lengthwise.
Place	the	onion	and	chicken	breast	in	the	baking	dish.
If	desired,	add	the	salt	and	pepper.
Place	layers	of	mushrooms	and	zucchini	over	the	chicken.
Combine	the	basil,	garlic,	oregano	and	tomatoes.	Pour	the	mix	over	the
vegetables.
Secure	the	cover	on	the	baking	dish.
Bake	at	450	F	for	approximately	30	minutes.	The	chicken	must	be
thoroughly	cooked	through	to	the	center.
	
	
Serving	Instructions,	Tips	&	Variations:	Serve	this	dish	with	a	side	of
wild	rice.
If	desired,	sprinkle	grated	Parmesan	cheese	over	this	dish.	
If	desired,	use	a	bit	of	extra	basil	and	oregano.
