HOT MUSHROOM CANAPE

        Ingredients
        3 tablespoons butter

        3/4 chopped onions
        1 8oz. can shopped mushrooms
        1/2 teaspoon salt
        1 egg yolk
        2 tablespoons f lour

        1 teaspoon lemon juice
        2 tablespoon white wine


        Instructions
        Melt butter in skillet, sauté onions until soft and lightly brown. Add mushrooms
        (drained), salt, f lour and stir. Beat egg yolk with lemon juice and wine, then add to
        mixture. Cook until thickened. Spread on crackers
        Makes 24






        CRAB BITES

        Ingredients
        1 can (7 1/2 oz.) crabmeat drained
        1/3 cup mayonnaise
        2 tablespoons Parmesan cheese

        1 tablespoon white wine
        Party rye or sliced Italian bread
        paprika


        Instructions
        Mix first 4 ingredients and put on buttered rye. Sprinkle top with paprika
        and broil until browned.  Makes about 24




        HELEN’S CURRY SHRIMP CANAPES

        Ingredients
        1 can small shrimp drained and slightly mashed                          1/8 teaspoon curry
        1 teaspoon lemon juice                                                  1/4 cup mayonnaise
        1 tablespoon Parmesan cheese                                            2 tablespoon bread crumbs



        Instructions
        Mix together and put on thinly sliced Italian bread. Broil till golden brown.
        Serve hot.
