POTATO SALAD &  SOUTHERN POTATO SALAD

        Ingredients
        6 large potatoes peeled and diced
        1 onion cut and sliced thinly

        1 cup mayonnaise
        1 teaspoon vinegar
        chopped parsley to taste and decorate
        1 teaspoon salt
        1/2 teaspoon pepper
        1 teaspoon sugar 1 teaspoon oil


        Instructions
        Boil potatoes until tender but not overly soft.
        Mix other ingredients and then add potatoes
        to mixture, mix and refrigerate.



        To make southern potato salad:
        Add 1 or 2 hard boiled eggs cut up and mix
        well into potato salad.


        My Son, Todd and I love the southern
        potato salad best.






        GERMAN POTATO SALAD

        Ingredients
        1 ½ small potatoes
        1/2 small onion chopped

        3 tablespoons white/clear vinegar
        1 teaspoon salt
        2 sticks chopped celery
        3 tablespoons oil
        2 teaspoon sugar
        1/4 teaspoon black pepper
        Optional- bacon bits, parsley



        Instructions
        Cook potatoes in salted in salted water until tender.
        Drain and quarter potatoes and add to celery, parsley and onions.
        Combine oil, vinegar, sugar and salt and pepper.
        Fold in bacon bits at this time. Cover and refrigerate.
