WARM PENNSYLVANIA HOT SALAD DRESSING

        Ingredients
        6 slices bacon
        1 large egg

        3 tablespoon sugar, heaping
        1 teaspoon salt
        3 tablespoons vinegar
        1 teaspoon f lour

        2 tablespoon water



        Instructions
        Fry 6 slices bacon until crisp and save bacon grease.
        Beat egg in bowl until well mixed.

        Add sugar, salt, vinegar and flour and beat well.
        While mixing, add water. Heat grease from bacon and then stir in mixture over low

        flame. Keep stirring until it thickens. Pour over spinach or salad and add bacon
        broken into small pieces. The dressing is served warm.



        I remember my mother making this dressing over spinach. Since my Nana lived with

        us and she loved this dish that she used to make, mom would make it ever so often to
        make Nana happy.








        SANDY LA PORTA’S BALSAMIC VINEGAR DRESSING


        Ingredients
        3 tablespoon balsamic vinegar                1 small garlic clove chopped fine
        salt and pepper to taste                     1/2-3/4 cup olive oil



        Instructions
        Slowly, whisk in oil to other ingredients which are in a small bowl. Dressing should

        thicken as oil is whisked in. Add enough oil to taste. Use more oil if you want it to be
        less pungent. Servings for 2 or 3 large salads.



        Sandy lived in the next house to me when I was growing up on Waterview Place in

        Lynbrook, New York. After she left Lynbrook, Sandy lived in an apartment in New York
        City by Central Park and Lincoln Center for years.
