essential that sustainability is woven through
the entire tourism value chain. An example of
the same is offered by the Morocco based
―inbound tour operator‖—Atlas Voyages.
Atlas Voyages was established in 1964 and
has over 12 branches across UK (Atlas
Voyages, 2013). The tour operator has
contributed significantly towards ―developing
regulations for food safety and hygiene‖ in
Morocco, which in turn has supported
Morocco‘s overall objective of attracting more
tourists, by highlighting the place as
environment friendly and with regulations that
meet international standards. Atlas Voyages
developed a ―suppliers‘ hygiene control
campaign‖ for 17 hotels and restaurants which
the company identified as its key suppliers
(based on the frequency and volume of the
business). The campaign focused on quality
control for food as well as hygiene. Atlas
Voyages requested Cristal Society, specialists
in HACCP (Hazard Analysis and Critical
