                                         Bbq Sauce




                                         Ingredients


               2- Medium lemons                                       1-chopped jalapeno
               Juice from 1 orange                                    2-tsp black pepper
               1- Medium Texas sweet onion                            1- Minced garlic clove
               1- 15 oz can crush tomatoes                            3/4 cup white vinegar
               1- 6-oz can of tomato paste                            2- Cans Lone-Star Beer
               3/4 cup brown sugar (or 3/4 cup honey)
               1- Tbsp brown mustard
               1- Tbsp molasses

               Squeeze the juice from both lemons, and the orange. Peel one of the lemons,
               cut the rind into thin strips and toss the zest or rind into the pot.

               Finely chop the onion and add it along with the crushed tomatoes, tomato
               paste, honey (or brown sugar) and brown prepared mustard and mix well.

               Add the molasses, being careful not to add too much. It is not a substitute for
               honey or sugar and will make the sauce bitter if overdone. If you want a
               sweeter sauce, use either more sugar or honey.

               Add the jalapeno, black pepper, minced garlic and white vinegar.

               Stir the mix well and bring to a simmer on very low heat for about an hour or
               until it begins to bubble instead of simmer.

               Add one can of Lone-Star or Pearl Beer and simmer another 45 minutes
               letting the sauce evaporate (a little longer for a basting sauce, shorter for a
               dipping sauce.  Add another can of beer and cook it down again.
