SWEET POTATO

Servings: 2
Cut a large sweet potato into skinny fry pieces
and add 1 tbsp of olive oil and sea salt on top.
Bake at 400 for 15 mins. Top with 80g of cubed
skim milk cheese and gravy.
For gravy: steam 1 cup of mixed veggies: onions,
carrots and mushrooms and food process until
completely puréed. In a small pot, add the purée
with 1 cup organic beef broth, 1 tsp of onion
powder, 1.5 tbsps tapioca flour, 1 tsp of pink salt.
If you ever want to consume this meal outside 121
your metabolic window, simply substitute the
sweet potato with baked carrot sticks or
butternut squash.
