ACAI FRUIT PIE







                            Servings: 6






              Directions: For the first layer: In a food

          processor, blend together: 1 cup walnuts, 1-
                1/2 cups of pitted dates, 1/2 cup of

                 unsweetened shredded coconut.

             Second layer: blend together: 1 scoop of

              vanilla protein powder, 1 cup of pitted

            dates, 1/4 cup of coconut butter, 1 tbsp of
            lucuma powder, 1/2 cup of raw cashews.

            Third layer: blend together: 1 frozen acai

            puree packet, 1/4 cup of coconut butter, 1

           tsp of vanilla extract, 1 cup of sundried figs.

             Pat down each layer on a round pie bowl                                                                                 158
           until completely flat and covered. Top with

                     strawberries and coconut!
