SPINACH EGG






                                                                      MUFFINS                                                        Servings: 2







                                                                      Directions: In muffin molds, add mixture: 1 cup of
                                                                                                                                            13
                                                                      eggwhites, 2 slices of chopped up chicken bacon, 2 eggs, 1
                                                                      tbsp of nutritional yeast, 1 tbsp. of sesame seeds, 1 tsp of
                                                                      sea salt. Bake at 350 for about 15 mins. (Makes for 2

                                                                      servings)
                                                                      Serve with a strawberry balsamic salad:

                                                                      Mixed lettuce, with 1/2 a cup of fresh strawberries.
                                                                      Dressing: 1 tbsp. of balsamic vinegar, 1 tbsp. of flaxseed

                                                                      oil, with fresh lemon juice.
