Peach Cobbler
In the south, peaches are a big deal. The town of Gaffney, South Carolina even has
a peach water tower! Beyond that, delicious peaches are a great source of Vitamin
E, keep your bones healthy, keep skin healthy, and are a great low calorie snack.
Ingredients Instructions
For the filling: Preheat oven to 350 degrees and spray a 9x13
10 peeled and sliced peaches baking dish with nonstick spray. Mix together
1 tsp vanilla the peaches, arrowroot powder, vanilla, lemon,
1 tbsb lemon juice coconut sugar, and nutmeg. Let sit. In another
1 tbsb arrowroot powder or cornstarch bowl, mix the oats, almond flour, coconut
3 tbsp coconut sugar sugar, salt and cinnamon. Mix well, and add
1/4 tsp nutmeg in the almond butter, coconut oil, and vanilla
until it can be pinched and stays together.
For the topping: Place the peaches into the baking dish and
cover with the topping, pressing down slightly
1 cup rolled oats with a fork or spatula. Bake for about 40
