Restaurant structure
• Restaurant manager: Overall management of operations. The manager’s role
is second to the restaurant owner (and sometimes is filled by the owner) and
includes general employee management, financials & overall supervision,
Handling suppliers and stock orders, shift scheduling, employee allocation,
problem solving. At end of shift, the manager is responsible for payments
for employees, tips, preparation for the next shift, financial report and
documenting.
• Shift manager: The shift manager is mostly responsible for the employees.
They usually report to the restaurant manager or restaurant owners. This role
includes the allocation of employees to different restaurant areas, handling
with mid-shift problems, attending to customer issues and shift closing. This
includes reporting, employee payments and preparation of the floor for the
next shift.
• General employees: This includes all other positions of the restaurant
staff; waiters, bartenders, hostess, cleaners, cooks, piccolo (runner). These
positions includes basic work activities such as shift requests, clock punching,
work tracking & payment requests.
• Restaurant owner: It’s crucial for the restaurant owner to know what’s
going during their absence. Most of their activity involves low-level viewing,
monitoring and analyzing of ongoing activities. An owner’s involvement
could vary from basic monitoring and up to being deeply involved in every
16 aspect of the management process. Typical tasks: stock management, dealing
with problems in the employee staff, accounting, monitoring & employee
interviewing.
