           23. Estimation of Peroxide Value in


                 Animal Protein Sources



           SCOPE
           To estimate the Peroxide Value (PV) in Meat and Bone
           meal and Fishmeal.


           PRINCIPLE
           Lipids  undergo  auto  oxidation  in  presence  of
           atmospheric oxygen and metal ions to from peroxides
           and hydro peroxide. Thus leading to oxidative rancidity.    Picture - 1              Picture - 2
           A known volume of the fat, oil or any given sample is
           dissolved  in  Acetic  acid  -  Chloroform  mixture  and
           saturated potassium iodide is added in acidic medium.
           The liberated iodine is titrated against standard sodium
           thiosulphate  using  starch  indicator.    The    liberated
           iodine   forms   a   blue   colour   complex,   which   on
           titration  becomes colorless. Further calculating gives
           Peroxide Value, thus showing the degree of rancidity.
