Running a Great Shift Learner Guide

        When assigning zones to each manager, we have to consider the flow of activity through the restaurant during revenue:


                                                        Front Door



                                                            Bar



                                                       Kitchen/Expo


        We try not to give 1 manager the front door and bar zones during a busy shift because the bar becomes very active right
        after the front door – and there’s often overlap!  When 2 managers are working during revenue, we can give 1 manager
        the front door, dining room and washrooms, and another manager the bar, lounge and expo zones.  This helps to split the
        activity which minimizes the chance of 1 leader becoming overwhelmed.

        Two Manager Zone Management

        When 2 managers are working during revenue, we suggest the following zones:


                                                          front door

                               washrooms




                                                  dining room   lounge                  bar




                                                            expo

                                                           kitchen
