Three Manager Zone Management
When 3 managers are working, we suggest the following zones:
front door
washrooms
floater
dining room lounge bar
expo
kitchen
Typically it’s the GM that covers the “floater” and “front door” zones – this would apply on the busiest shifts (i.e. Friday and
Saturday dinner). S/he focusses attention at the front door, but otherwise spends time mentoring the leaders in each
zone. This mentorship can include working side-by-side to entrench Every Face, Every Table, Every Time You Walk the
Floor. It can also include teaching leaders how to “cherry pick” items on expo (see our KDS and Ticket Time Learner
Guide for more information on this). While floating, the GM’s goal is to develop his/her other leaders, which earns
stronger shifts.
Hotel Locations
Hotel locations will include banquet spaces (when banquet leaders are off shift) and room service in their zones.
Creating Permanent Zones
For continuity, GMs want to ensure that their zones are permanent. This way, every leader always understands
everything that his/her zone includes once it’s assigned.
If you review the floor maps shown above, the yellow colour can always be considered “zone 1”, the blue can always be
“zone 2” and the red can always be “zone 3”.
With this system, when there are 2 managers working and a leader is assigned “zone 1”, s/he always knows the areas for
which s/he is responsible.
Assigning Zones
When assigning leaders their zones, make sure you put aces in places! For example, your bar manager is probably the
best person to jump behind the bar when that team needs help. Further, s/he is best equipped to mentor and develop the
bartenders. Therefore, the bar manager should have the zone that includes the lounge and bar.
Own Your Zone!
Anytime you have to leave your zone, ensure that another leader is covering it! Be sure to clearly communicate this with
the leader and then notify him/her once you retake your zone.
