Quality and Food Safety Management in Food
Service Industry
ISO standards include 20 items which cover three aspects
of quality; management of the quality system, methodology of
the system, and maintenance of the system. External benefits of
ISO certification relate to customer perceptions of quality,
improved customer satisfaction; increased competitive
advantage, and reduced customer quality audits, whereas
internal benefits include better documentation, greater quality
awareness, and increased productivity and efficiency.
ISO standards exist to give the guest a confidence that the
product or service being provided will meet certain specified
standards of performance and that the product or service will
always be consistent with those standards.
In order to obtain ISO certification, a company must
undergo a third-party assessment of its quality management
practices by independent auditors associated with accredited
registrars. The fee charged by the certifying body is relatively
small. Fees depend on the size of the organization and the level
of accreditation.
