Quality and Food Safety Management in Food
                   Service Industry

The quality director is likely to have two primary roles-

administering the quality department and assisting upper

management with strategic management. A key role for the

quality department is to help its internal customers achieve their

quality objectives. The major functions of the quality

department are:
