Quality and Food Safety Management in Food
                       Service Industry

      Still there are many barriers to quality management such
as lack of management commitment, lack of effective
communication, lack of training and education, lack of
financial and human resources, lack of long-term corporate
direction, fear of rigidity, fear of process standardization, and
inability to change the paradigms of top management and
organization culture.

      Some quality managers fail for reasons unrelated to
quality, such as lack of leadership skills and poor rapport with
peers. However, some failures are attributable to quality-
related factors such as:

 1. Preoccupation with conformance
 2. Emphasis on technology versus business
 3. Emphasis on departmental goals
 4. Unfamiliarity with the culture
